INGREDIENTS
3 medium sized tomatoes, roughly chopped
2 Tbsp lemon juice
2 Cups leafy greens of choice- kale, collards, romaine, chard, etc.
½ tsp high mineral salt
½ tsp onion powder
1” piece fresh ginger
1 avocado, peeled and pitted
1 cup or more purified water to blend
DIRECTIONS
1. Place tomatoes into blender first, then add remaining ingredients (except avocado) to blender. Blend for 20 seconds on high, or until contents are smooth and creamy.
2. Add avocado and blend again until smooth.
3. To create a “hot” soup, heat the water that you add to your soup.
4. Stored in a sealed container in the refrigerator, Warming Ginger Tomato Bisque will keep for 2 days.

The seasons are changing and that means it’s time to lighten up our heavy winter diets and add more leafy greens into the menu plan. But if you live someplace where the temperatures are still flirting with winter, this Ginger-Tomato Bisque will keep you warm in a way no salad ever could.
Pair this warming soup with a handful of raw crackers or a small side salad, and your body will be feeling “spring” before you know it!
