Yield
1 large serving
1⁄4 cup whole chia seeds
1⁄2 apple, diced
1⁄4 cup raw pecan pieces, or raw pecan halves, roughly chopped
1⁄4 tsp ground ginger
1⁄4 tsp ground cinnamon
1⁄4 cup shredded coconut (optional)
Smidge high mineral salt
10 drops vanilla crème stevia
- Place the chia seeds and smidgen of salt into a serving bowl and top with hot water. Stir the chia to break up any clumps and immerse each seed in the water. Set aside for a few minutes to allow the chia to “gel”.
- Top the chia with the diced apple, pecan pieces, and optional shredded coconut.
- Then sprinkle the cinnamon and ginger on top.
- Finally drizzle the drops of vanilla crème stevia on top.
- After a few minutes the chia will gel and you can stir all ingredients until fully incorporate, if desired.
- Enjoy immediately, or store in a sealed container in a refrigerator for up to 2 days.
