1 9” fresh fruit pie
For the crust:
1 cup raw almonds, unsoaked
¼ cup raw pecans, unsoaked
1/8 tsp high mineral salt
pinch cayenne pepper
9 Medjool dates, pitted and crowns removed
- To make the crust, place almonds and salt in a food processor fitted with an “S” blade and process until coarsely ground.
- Add the pecans and process again until finely ground.
- Add the pitted dates, and process until the mixture begins to stick together. Do not over process.
- Spread crust mixture loosely into the bottom of a pie plate or tart pan. Once uniformly distributed, press more the crust into the sides of the pan, then firmly into the bottom of the pie plate using the back of your fingers to press into place . Don’t forget to press the crust into the edge of the dish where the bottom meets the side.
For the filling:
4 cups fresh, ripe mango, peeled and pitted
1 cup dried mango, soaked in water for 12 minutes, then drained
Sliced fruit of choice to decorate the pie- consider using more mango and other fruits with contrasting colors
- Place the fresh mango into your blender carafe, then add the soaked and drained dried mango on top.
- Starting on low, then gradually turning up to high, blend the mango until complete smooth and creamy.
- Pour the blended mango into the crust lined pie plate, and evenly distribute the filling to create a beautiful and silky looking pie.
- Top your pie with beautifully sliced fresh fruit arranged like a mandala or pattern that you like.
- Place your fruit pie in the refrigerator for 30 minutes to set.
- Stored in a sealed container in the refrigerator, Simply Beautiful Mango Pie will keep for 5 days.
A Note from Alicia:
This recipe has several steps, but it’s actually quite simple to create. The crust can be made in advance and, if kept in a sealed container in the freezer, will keep for up to 6 months. Make an additional batch in advance so the next time you’re entertaining, you can make a gorgeous pie in even less time! Enjoy decorating and serving this truly delicious pie. Simple, beautiful, yum!
