INGREDIENTS
5 cups red and/or yellow heirloom tomatoes, rough chopped
1 ½ red bell peppers, seeded and rough chopped
½ jalapeno, seeds and inner membrane removed
3 Tbsp lemon juice
1 medium avocado, peeled and pitted
1 Tbsp light miso
¾ tsp onion powder
DIRECTIONS
- Place tomatoes into blender first, then add remaining ingredients (except avocado) to blender. Blend for 20 seconds on high, or until contents are smooth and creamy.
- Add avocado and blend again until smooth.
- Stored in a sealed container in the refrigerator, Heirloom Tomato & Red Pepper Bisque will keep for 3 days.
Variations
- replace the red bell pepper with 2 medium rough chopped carrots
- You can garnish this delicious and creamy soup with sliced avocado, pumpkin seeds, finely diced red bell pepper, and more. Use your imagination.
