6 Nori Hand Rolls
Ingredients
1 cup shredded carrot
1 cup fresh sprouts- clover, alfalfa, broccoli, etc.
1 avocado, pitted and sliced into half moons
2 handfuls fresh cilantro/coriander
3 green onions, sliced lengthwise and cut into thirds
12 olives, sliced in half (optional)
2 handfuls mixed greens or 6 small leave of Romaine Lettuce
6 nori sheets
- Place nori sheet on a dry cutting board or other surface, shiny side down. You will notice, on the non-shiny side, there will be subtle lines in the nori. They should be running in a horizontal direction.
- Place small handful of dry mixed greens or small dry romaine leaf parallel to horizontal lines on nori sheet to keep nori from becoming wet from other ingredients. Once wet, the nori sheet will begin to break apart.
- Begin layering ingredients horizontally into your nori roll- sprouts, cilantro, green onion, avocado, shredded carrots, and optional olives.
- Roll your nori roll into a lovely tube with all of your ingredients inside. Use a small amount of water on your fingers to moisten the end of the nori and seal it to itself.
- Using a dry chef’s knife, you can cut your nori rolls into smaller pieces, or keep them larger for hand dipping into your favorite dipping sauce. Serve immediately with wheat and gluten free soy sauce (tamari), pickled ginger, sauerkraut, wasabi paste, or other dipping sauce of your choice.
Practically Peanut Sauce
Prep Time: 7 minutes
Makes 1 cup, or 4 servings
½ cup raw almond butter
¼ cup orange juice
1 Tbsp lemon juice
2 Tbsp tamari
½ tsp crushed garlic (approximately 1 medium clove)
2 Tbsp grated fresh ginger
2 Tbsp or more purified water as needed to blend
- Place all ingredients in a blender and puree until smooth. Add only as much water as needed to form a thick sauce
- Store in a sealed container in the refrigerator, Practically Peanut Sauce will keep for up to 10 days.
Variation #1: Add 1 Tbsp Red or Green Curry Paste for a spicier Asian inspired sauce

Even though it’s snowing here today in Colorado, my body is still craving lighter, spring-like foods. These delicious Nori & Lettuce Rolls are a great way to mix up your stale salad routine and have fun in the kitchen, too. Kids love to help make Nori Rolls, and it’s a great way to get their hands on colorful produce, too.
I love to add avocado and olives to my Nori Rolls, but get creative and try new ingredients to discover what makes your taste buds sing. You can try grated daikon radish or beets, sauerkraut, guacamole, hummus, or even your favorite nut or seed pâté.
