Summertime recipes demand summer fresh ingredients! This soup is lovely, warm or cold. You can easily adjust the temperature by adding hot, or warm, or room temperature water.
1 red bell pepper, seeded and rough chopped
2 medium zucchini, peeled and rough chopped
2 carrots, rough chopped
1 medium clove of garlic
1 green onion
2 tsp high mineral salt
5 leaves chard or other leafy green like spinach, romaine, kale (about 2 cups)
1/4 tsp cumin
1 1/2 Tbsp lemon juice
1 medium handful cilantro (about 1/2 cup)
1 small avocado, pitted and peeled
2 cups water
Place all ingredients except avocado and cilantro, into a high powered blender, and blend until smooth. Add avocado and blend until creamy. Last, add cilantro and blend, leaving small bits of cilantro leaves throughout.
*OPTIONAL: Garnish with diced avocado, chipotle or cayenne pepper, or cilantro leaves.
