INGREDIENTS
6 cups watermelon, outer skin removed, rough chopped
2 cups fresh strawberries, crowns removed
1 cup cucumber, rough chopped
1 cup fresh mint leaves, loosely packed
DIRECTIONS
- Place watermelon, strawberries, cucumber and mint into a blender carafe and blend until completely liquefied and smooth.
- Serve immediately, and garnish each glass with a fresh strawberry, cucumber slice or watermelon cube.
- Stored in a sealed container, Refreshing Watermelon Cooler will keep for 48 hours.

Watermelon is the quintessential summer fruit, and it’s a powerful source of anti-inflammatory and antioxidant support. It’s also extremely high in water content, making it an excellent food for hydration during the warmer weather months. I love to eat (and drink) watermelon after a long hike or a hot yoga class.
The addition of strawberries, cucumber and mint really make this drink the perfect cooling beverage. And did you know that the skins of cucumbers are amazing skin beautifiers? In my humble opinion, this drink is meant for the skin-showing months of summer!
You can also freeze this recipe in ice pop molds or ice cube trays and enjoy it as an icy treat. Or add the Watermelon Cooler ice cubes to a glass of sparkling water for a fun mocktail. Oh, the possibilities!
