4 parfaits
1 cup fresh strawberries, diced
1 cup fresh raspberries
1 cup fresh blueberries
½ cup raw sunflower seeds
½ cup raw pumpkin seeds
1 ½ cups coconut yogurt
Optional Garnish:
Bee pollen
Raw cacao nibs
Shredded coconut
Fresh mint leaves
Fresh edible flowers
- Place a small layer of fresh fruit in the bottom of each parfait cup.
- Top with a nice dollop or two of coconut yogurt to create a layer of yogurt, then create another layer with the sunflower and pumpkin seeds.
- Next, add another layer of fruit, another layer of coconut yogurt, and a final layer of seeds.
- I like to top my parfaits with fresh fruit, bee pollen, cacao nibs and other garnishes to make them pleasing to the eyes. Have fun with this and make each parfait as pretty as you desire.
- Stored in a sealed container or wrapping each parfait glass in plastic, Red, White & Blue Parfaits will keep for 24 hours.
A Note from Alicia:
In addition to craving watermelon, I can’t seem to each enough berries right now. These yummy, and rather patriotic parfaits have been my go-to breakfasts for a couple of weeks, and I’m not showing any signs of slowing down. I even served these parfaits on a recent Private Weekend Intensive with a client, and they sustained us all morning long. Yum is all I can say!
Depending on how sweet your coconut yogurt and fruit is, you may wish to add vanilla extract, or even a flavored stevia to your yogurt to make this into more of a dessert. You can also serve these parfaits in martini or wine glasses if you don’t have any parfait glasses, which is a really fun and fancy way to enjoy these beauties for the up and coming holiday here in the US.
