Ferment yogurt overnight in a warm dry place

INGREDIENTS
2 cups young coconut meat, cleaned of all debris and rough chopped
1 cup purified water or coconut water
1 probiotic capsule or ¼ tsp probiotic powder of choice
For flavored yogurt:
½ tsp vanilla, almond or cherry extract –or- Medicine Flower essence of choice
raw honey, light agave, maple syrup or liquid stevia extract to sweeten
DIRECTIONS
- Place the young coconut meat in a blender, adding the water and probiotic powder. If using a probiotic capsule, open the capsule and empty the powdery contents into blender. Discard the capsule itself.
- Blend until creamy and smooth, and the coconut mixture takes on a shiny and smooth texture.
- Empty the blender carafe into a large glass jar or container that will allow the coconut mixture to nearly double in size as it ferments. Cover the jar opening with cheese cloth or a kitchen towel and secure with a rubber band if needed.
- Place the glass container into a dehydrator set at 95°F (35°C) and let the coconut mixture sit 12 – 18 hours. You will see bubbles of gas appear in the coconut mixture over this time, and the mixture will expand and nearly double in size. This is the process of fermentation taking place.
- Remove the coconut yogurt from the dehydrator, empty into a large mixing bowl and flavor with extract or flower essence of choice. Sweeten with sweetener of choice. If using liquid stevia extract, approximately 20 – 25 drops will sweeten this amount of yogurt well. Incorporate flavorings and sweetener well using a rubber spatula.
- Stored in a sealed container in the refrigerator, Creamy Coconut Yogurt will keep for 5 days. To double this recipe, simply double all ingredients except the amount of probiotic powder. One capsule or ¼ tsp powder is sufficient for a double recipe as well.
