Yield: approximately 5 ½ cups or 4 medium sized servings
For the Salad:
2 medium golden beets, peeled and cut into small cubes
4 cups fresh arugula or rocket (to save time buy pre-washed if available)
½ cup raw hemp seeds
Directions
1) Remove the green stems from your golden beets and save for juicing if you’d like.
2) Peel and cube the beets, then set aside in a large mixing bowl.
3) Toss the fresh and cleaned arugula leaves with the golden beets.
4) Stored in a sealed container in the refrigerator, pre-dressed salad will keep for 4 days.
For the Mustard Dressing:
¼ cup extra virgin olive oil
1 Tbsp coconut vinegar or apple cider vinegar
1 Tbsp prepared Dijon mustard
¼ tsp high mineral salt, or more to taste
Freshly ground black pepper to taste
Directions:
1) Place all ingredients into a blender and blend until all ingredients are completely incorporated.
2) Stored in a sealed container in the refrigerator, Mustard Dressing will keep for 7 days.
To Assemble the Salad:
1) When you are ready to eat, drizzle the arugula and beets with the mustard dressing and toss well. Do not overcoat the leaves, as they will take on an undesirable texture.
2) Sprinkle raw hemp seeds on top of your dressed salad and serve immediately.
3) Add freshly ground pepper to taste, if desired. Enjoy!
